- 50g Butter
- 50g Flour
- 200g Allgäuer Emmentaler (shredded)
- 1 Liter Beef Soup
- 1 Egg Yolk
- Some Milk or Cream
- A Pinch of Sugar
- 2 Slices Toast Bread
- 20g Butter
Melt the butter in a pot and stir in the flour. Stir well until smooth then add the beef soup little by little. Bring to boil and add the cheese now. Stir well until the cheese has melted completely. Mix the egg yolk with some milk or cream and blend this into the soup.
Add Salt and Pepper and maybe a pinch of sugar to your liking.
Cut the Toast into dices and roast them in a pan with butter until they are golden brown.
Sprinkle them on top of the soup before serving.
